Wednesday is Prince Spagetti Day!

Remember back in the day those commercials for Prince Spaghetti....
visualize...Old Italian village...dinner time, 
Mamasita calling her beloved son 
home for dinner..."Anthony, Anthony...", in the late 70's
 I think they added a girl's name--"Maria, Maria.."
I think it's a pasta day for us today...so I thought I would 
share a delicious recipe with you!



1-3 tbs Olive oil
2 Shallots (minced)
2 zucchini (cut lengthwise, then 1/4" pieces to look like half moon)
2 yellow squash (same as above)
1 pint of grape tomatoes (cut in 1/2)
1-2 lbs raw shrimp (peeled, deveined)
1 tbs lemon zest (just the yellow stuff, not the white)
1 cup Italian parsley (finely chopped)
1 cup basil (finely chopped)
Kosher salt
fresh ground pepper

1-2 lbs Thin spaghetti (cooked Al Dante)*
Fresh grated Parmesan cheese
*You can also substitute spaghetti squash

Heat Olive oil (enough to cover the bottom of the pan) in a sauce pan, add shallots, saute until transparent, add zucchini and yellow squash, saute 3-4 minutes then set aside.

In a separate pan, heat olive oil (enough to cover the bottom of the pan), add shrimp and cook till pink 2-4 minutes depending on the size.

Add shrimp to veggie mixture, toss mixture with cooked pasta then add tomatoes, lemon zest, parsley, basil, salt and pepper to taste...enjoy!

I've been tagged!

Through the efforts of another Grand Dame workingmomtellsall I have been tagged to write some random things about myself, hmmmmmm, let me think.....Oh, I've got it!

1. When it comes to tags I feel like I am dyslexic...all these rules, I'm not sure I will get them straight~~~(no offense to my dyslexic friends:)

2. I have 4 living brothers, 1 beautiful sister, a mom, a dad, a step mom, a step dad, 8 step brothers and sisters, 8 nieces and nephews, 10 step nieces and nephews, a husband and 3 children:)...that's just from my side of the tracks!

3. Kate Hepburn has always been my Idol...Now, there was a Great Dame!...A gal that held her own with any of her leading men...

4. I have been known to follow a person who litters en route to the next stop light, innocently open my window to suggest I need directions, then proceed to lambate them about how it is up to us to keep the environment clean and how they should keep their trash in their shack and not on our roadways....I have also been known to let people know they are number one when then carelessly cut me off...I'm just sayin'



5. I have no patience for snivilling idiots who don't try to figure things out..of course I mean the big things like...which is the best school for my kid and not just the best school.........not stuff like does this dress make my butt look big....well, I guess I could be guilty of that too..........


6. I live life fully...no excuses, no guilt, just live life!

A Week in Review.......


This week started out with an overnight stay at the spa with my W-chester gal pals…what a blast….we were buffed and puffed and found our inner core through a series of treatments, yoga and pilates classes. I loved the Pilates…at my age I really need to focus on the inner core 
to combat the muffin top that keeps popping out!

Following a fine meal we headed back to our rooms to play 
a game of sex trivia….

After 24 hours of shuffling around in a fluffy white robe and flip flops, 
it was back to reality…. my daughter and I 
embarked on a quick college tour... 
(daughter: “this is my spring break…do you get it, break, like I need a break!” 
mother: “fine, the community college in town is fine by me”)….GRRRRRRR!
6 schools, 3 days, 3 cities, 700 miles, 2 hotel rooms, 
and a few yummy road food meals…later! 
She could see herself attending 2 of the 6 schools☺

Since my little darling wasn’t too keen on the college tour scene, I suggested a little retail therapy to calm the nerves……during the course of perusing the shops in the mall, we stumbled upon this vending machine…this is a first for me…I mean really, whoever thought you can get your zit cream from a vending machine!


I’m just sayin’…All this in one week….I think I need to visit the spa again.

I'm Back........

After a much too long hiatus, I am back!  And,  I am not...I am off to the spa with my gal pals from W-chester for a much needed day of getting pampered!....I will fill you you in on the details during the next few days...then  I am off college hunting with my daughter...that should be interesting!
