Happy May Day!

As a child we would honor May 1st, "May Day" by bringing flowers 
to our elders some we knew, some we didn't, 
some we would surprise, some we didn't...
never the less, they were so touched to be remembered.  
So today I am honoring this day with a bouquet to you and yours...



May 1st, often called May Day, just might have more holidays than any other day of the year. It's a celebration of Spring. It's a day of political protests. It's a neopagan festival, a saint's feast day, and a day for organized labor. In many countries, it is a national holiday.

Wednesday is Prince Spagetti Day!

Remember back in the day those commercials for Prince Spaghetti....
visualize...Old Italian village...dinner time, 
Mamasita calling her beloved son 
home for dinner..."Anthony, Anthony...", in the late 70's
 I think they added a girl's name--"Maria, Maria.."
I think it's a pasta day for us today...so I thought I would 
share a delicious recipe with you!



1-3 tbs Olive oil
2 Shallots (minced)
2 zucchini (cut lengthwise, then 1/4" pieces to look like half moon)
2 yellow squash (same as above)
1 pint of grape tomatoes (cut in 1/2)
1-2 lbs raw shrimp (peeled, deveined)
1 tbs lemon zest (just the yellow stuff, not the white)
1 cup Italian parsley (finely chopped)
1 cup basil (finely chopped)
Kosher salt
fresh ground pepper

1-2 lbs Thin spaghetti (cooked Al Dante)*
Fresh grated Parmesan cheese
*You can also substitute spaghetti squash

Heat Olive oil (enough to cover the bottom of the pan) in a sauce pan, add shallots, saute until transparent, add zucchini and yellow squash, saute 3-4 minutes then set aside.

In a separate pan, heat olive oil (enough to cover the bottom of the pan), add shrimp and cook till pink 2-4 minutes depending on the size.

Add shrimp to veggie mixture, toss mixture with cooked pasta then add tomatoes, lemon zest, parsley, basil, salt and pepper to taste...enjoy!
