This is so disturbing...why is an 8 year old boy allowed to attend a gun fair,

about the safety of our children...

Ok fellow bloggers...Now I know we are in a bad place in our economy (dare I say recession?!?)...however, my pals and I (mental and tsannie) are tri-chairing a fundraiser for our local community hospital's non-profit foundation, (The Norwalk Hospital Foundation). Just Got My Spur's A Janglin'

Yesterday my lovey and I enjoyed a gorgeous evening here with a game of twilight golf at a nearby club...little did we know that there was a theme, "Cowboy"

We missed the memo! Damn, and I have some really great cowboy golfwear, like my Stetson, visor, Lucchese golf shoes, and club holster...NOT!

Golf was fine, I managed to remember to keep my head down after 4 holes...

geeeeeeze all these things to remember

just to hit a stupid ball across a lawn!!

Dinner was another story...we had a choice of 2 entree's, lovey got the salmon...very fishy...I got the pulled pork...OMG, I had to send it back...(If you are faint of heart..MPM, stop reading and put on TVLand)...It looked like someone placed the hairball my 17 year old retriever coughed up this morning on a plate along with some

black bean/corn salsa and collard greens...

yuck, yuck, yuck!

The best part of the evening was when one of the elders of the club got a hold of the microphone and sang "Home on the Range"....

I'm just sayin', just shoot me!!

Atleast they could have piped in this version:)

A Vermont weekend

Recently, my lovey and I spent the weekend in the very quaint town of Woodstock, Vermont. Complete with a general store called, Gillingham's that provides one stop shopping for anything from a fine Bordeaux, to window treatments, to VT maple syrup, or even fishing hip waiters.

We had a lovely weekend with our pals Mike and Mary. They have a beautiful home walking distance to town so we were able to walk to a fabulous dinner then stumble home...

Of course, prior to that, we had to visit the lovely Woodstock Inn

and pinch a few cookies during high tea!

While the weather was hotter than necessary we did manage to enjoy an afternoon of golf in the Greenfield Mts near Killington, VT.

And, discover a few covered bridges located throughout Vermont.

Mike and Mary were very gracious hosts...our stay was most appreciated! If you have a chance to visit Vermont, please do...

there is something to do for everyone...

until then we will keep the home fires burning.

PS. Mary and I hiked this MT...can I just say...I either need to stop this

kind of activity or get in much better shape:(

What would I do without the gardening guidance of my pals MPMama or TSAnnie...you see I hardly have a green thumb...actually, if truth be told, they might suggest that when it comes to gardening...I am all thumbs:) I own it, I'm fine with it! This spring I purchased a couple of dahlia's for the garden, pretty in pink and yellow...MPMama advised that if I cut back the flowers to the next bud, it will continue to bloom...so being the good student, I did as I was told and what a very pretty bouquet it produced...

Yesterday, after reading Noble Pig encouraging us to branch out from our usual wine ways, we loyal Chardonnay fans tried a fine Rose' wine...it was interesting and refreshing,

however, we are not ready to jump ship just yet!

Every now and then you just need a little break...I don't know about you, but, there are days when blogging seems more like a job than fun. I started out blogging for shitz and giggles...then all of a sudden, I am surrounded by folks that, this is their life...nothing, against that at all, I just can't commit.... So, I resume my regular life and pretend the blog isn't there...but it is and I am reminded that on some level I really do like it ...I guess the best part is reading the comments from all over the world (of course, that is on an incredible post day:)

Some of my friends started a gourmet group a few years ago. My husband and I have attended many of their glorious food fests...so much so that they asked if we would like to join them. We were honored and said yes...there are approximately 5 couples that share the dinner, each couple is assigned a course, the couple hosting the dinner provides the entree. This past weekend we hosted the dinner. As the host you also get the "right" to decide the theme for the evening. During a recent visit to Cabo San Lucas, Mexico, we stayed at the One and Only Pamillia (highly recommend this place...just a breath of fresh air!) The resort restaurant was created by the famous chef Charlie Trotter, it specializes in spa cuisine.

(all purchases @ the O&O gift shop are accompanied with this sweet canvas re-useable bag..very forward thinking and stylish too!)

Having had such an amazing experience there, we decided to select a Charlie Trotter inspired theme for our evening. This, is all well and good, however, as a first time host, it was wildly intimidating, the other couples have been doing this for years, this was our first!

We selected the menu, and assigned a recipe to each couple, as the host you can also invite other guests to join in on the fun...since this was my first excellent gourmet adventure, and considering my dining room table would comfortably seat 12 we invited just one other couple. While it is not required, the "other" couple wanted to participate, so their charge was to provide the aperitifs. In the CT cookbook, 2 recipes caught my eye, one for heirloom tomato and basil water and another for a peach lemonade, I thought the tomato and basil drink would be just delightful as a shot with a little bit of vodka, a salted rim and a wedge of lime, the peach lemonade would be perfect with a splash of champagne....I was right, with the T&B drink, although they went down so smoothly that we never got to the lemonade...another day;)

The appitizer, consisted of grilled prawns with a curried cucumber yogurt sauce, expertly prepared by J&P!

(hurry get the camera these are going quick!)

The first course was flawlessly presented by tsannie, steamed Pacific mussels in a saffron, fennel, tomato broth...this could have been a meal with a few baguette slices!

The second course, prepared by S&B was picture perfect..delicate steamed ginger mushroom wantons in a lite mushroom broth that left you wanting more....

The salad, was a mouth watering flavor sensation...a beautiful presentation of peaches, radishes and roasted red onion...tsannie out did herself!

Next, was the entree of grilled beef tenderloin, a side of tomato/leek strewn quinoa, prepared by yours truly...how can you screw up beef tenderloin...I got off easy!

The hardest part for me for this entire evening was making sure the table settings was up to par with the settings I have observed in dinners past...

We topped off the evening with a desert beautifully prepared with a flair by S&T...Chilled chocolate-orange souffles with chocolate sorbet...(we forgot the sorbet...which was fine by me...I am still enjoying the pint today;)

Ok, it's time...get your grilled cleaned for the season and fire it up!

Here is a great crowd pleaser....BBQ ribs!!

Ribs,

Jules Way!

*Baby back ribs...enough for your crowd and a little extra.

*Penzey's Bavarian Seasoning

*Kosher salt

*Fresh coarse ground pepper

*Liquid smoke (optional)

Preheat oven 250...low and slow...

-Line a cookie sheet with foil

-Place ribs on foiled sheet

-Liberally sprinkle with Bavarian, Salt and pepper

-Sprinkle/spray with liquid smoke (optional)

-Cover with heavy duty foil-seal tight all sides of sheet

-Place in oven and bake for 3 hours

Remove from oven and smack on your favorite BBQ sauce

(store bought or make your secret family recipe!)

The gooey-er the better....we want it "finger lickin' good",

hmmm, heard that somewhere before.

Now get the grill going extra hot, grill ribs on both sides till the sauce starts to caramelize

Just about 4 weeks ago, my dad suffered a stroke...A couple of my brothers and I flew to the Midwest immediately to meet up with our 3 other siblings. When we arrived it was quite late so we poked in on our dad only to find him in a "coma" state to help stabilize him. Deciding there was not much to do until the morning, we looked for a place to lay our heads until then...the sweet nurse suggested we stay in the family center of the hospital..

it had a pull out love seat and a chair.

Ok, I love my brother and all but at 6' something and 250+lbs, I said, Ahhh, I don't think this is going to cut it. We quickly found a Holiday Inn Express!

The first 72 hours were the hardest...we played the waiting game. Fortunately, I have many siblings, aunts and uncles who cared as much.

The nurses and doctors really didn't know what they were getting into...we took shifts going in to his room to talk with him while he was hooked up to every apparatus you can imagine...

they asked often...how many kids did your dad have??

Every day we experienced new emotions of sadness,

of hope, of uncertainty....I was very lucky to be surrounded by diversions..

to help remember a certain time of life, to make me smile and to eat something sweet...

my sister-in-law made these to die for short bread cookies that just melt in your mouth.

Diversions come in handy during a time like this...

my sister and I found a mall nearby and did a little retail therapy!

Today, my dad is recovering in rehab and works diligently every day to speak and walk again...

our prayers and thoughts are with him.

Finally, a beautiful day with not much to do...

so I decided to stock up on some

Vitamin D to ward off the evil C.

Why not a dip in the pool?...Oh wait, I don't have a pool...had one last year??

You see my lovey decided that we needed a bigger, better pool last fall, so we ripped out the old pool the surrounding deck too, to make room...

Only to find out that he may not have a job in 3 months.

So we waited through the winter months looking out at our frozen mud hole till spring.

Alas, it's spring...the job is gone, the hole is filled and

our lawn has just increased an additional 20' x 40'....

But hey, I am a Sagittarius for F's sake...I need sun!

Then I remember our early days of marriage

no kids, living in a swank condo in the city...

What did I do then?? Tar beach of course! So I grabbed my chair, oil and tea

and off to the driveway I go...the only thing missing is my reflector...perhaps Mentalpause will let me hang at her pool in exchange for shooing the ducks off..or milking her cows...

Another Culinary Concoction Follow-Up

This dish turned out to be more of a Veggie Bouillabaisse...

it was quite tasty

so here is my version of the recipe...or lack there of...

Tomato Sauce

Sorry old family recipe..Ha! Not really, there is no real recipe,

I just make it up as I go, here are the basics:

2-3 cloves of garlic

2 shallots

4 Tbs Olive Oil

7 plum tomatoes

(you can cheat and use a couple of cans of

petite diced tomatoes instead)

2-3 sun dried tomatoes (optional)

1/2 cup Locatelli Romano cheese (finely grated)

1 cup of Italian parsley (chopped)

1 cup of basil (chopped)

1/4-1/2 tsp fresh nutmeg

Fresh ground pepper (to taste)

Kosher salt (to taste)

Heat olive oil in a skillet.

Add garlic and shallots cook till opaque.

Add plum and dried tomatoes cook for 4-5 minutes.

Add cheese, parsley, and basil cook for 3 minutes.

Add nutmeg, pepper and salt cook for 2 minutes.

Pour mixture into a blender and pulverize for a couple of minutes.

Set aside.

The Veggies

4 Zucchini

4 Yellow Squash

4 baby eggplants

~~~

Food processor with 1/4" blade.

Process all of the above and keep veggies separate.

~~~

3-4 cups Shredded Cheddar/Jack cheese

(I have issues with cheese...the more the merrier!)

Locatelli Romano cheese

Fresh ground pepper

~~~

The Assembly

In a casserole dish line the bottom with sauce.

Artfully place zucchini around the dish.

Add a handful of shredded cheese and generously sprinkle with Romano cheese

Next, artfully place yellow squash around the dish.

Add a handful of shredded and Romano cheese.

The last layer is the eggplant, place around the dish.

Cover eggplant with the remaining sauce.

Then add the rest of the cheese over the top.

Cook uncovered @ 350 for about 40 minutes or until bubbly..

if it starts to brown too much cover with foil.

I served this with spaghetti squash and a slice of focaccia

(store bought..I'll share my recipe on another post;)

Move over for Dover...

I made Dover Sole for the first time last night...

of course with the help of tsannie,

the dish was delish...so I thought I would share...

So easy and so good!

5 fillets of Dover Sole

1/4 C Flour

Fresh Ground Pepper

Kosher Salt

3 Tbs Butter

1/4 C Olive Oil

1/4 C Vermouth

1 Lemon

Heat Butter and oil in a skillet (I use a cast iron)

Mix flour, pepper and salt.

Rinse fillets in water and shake off excess water.

Dip fillets in flour mixture.

Place floured fillets in hot butter/oil mixture

till brown on both sides.

Remove from skillet to a plate lined with

paper towels (helps soak off excess oil)

Continue to heat butter/oil mixture pour in

vermouth cook until alcohol burns off.

Whisk mixture with the juice of 1 lemon, salt and pepper to taste

Served with Rice Pilaf and a balsamic broccoli slaw

Wednesday morning I caught a glimps of Rachel Ray...she was preparing some sort of ratatouille that looked mighty fine...I am sure her site has the recipe. I was bored last night, so I had me a nice glass of vino and started to cook..remembering her segment but not going to her site, I thought I'd give it a try...well I got a little bit out of control and my ratatouille turned out to be more of a casserole or veggie lasagna...it looked pretty...

So instead of marvelling at their beauty, I found humor in their fluttering....

So....my cocktail corner friends, mental and tsannie, did a post re the birds they are attracting to their yard...la, la, la, so I decided OK, fine, I'll put something up in my yard and see how it goes. So, off to the store I go...got the Shepard's hook, a hanging feeder, a sock full of seeds, a window feeder and bird food that I can eat as trail mix in a pinch.

At first, I thought oh how sweet...

look at the little birdies, aren't they cute

Then...wait what's that big fat furry tail hanging upside down from the feeder... squirrels!! How do they get up there? Well apparently, those lovely creatures have the ability to jump 4 feet from the ground

and 8 feet from a roof or wall.

Why do I know this information?

Anyway, I spent the majority of the past 3 days chasing and screaming at the squirrels to leave...like they could understand~~most of the time the squirrels would saunter up the hill and look at me like "WTF lady, you put it out there...someone gots to eat it"~~that's squirrel speak...Did you know that squirrels must eat constantly or their teeth will over power their head? (speaking of teeth, check out Noble Pig today...hmmm, I'm just sayin')

...more useless information...

Back to the store I went....apparently, I am a baffoon....

these bird feeders also require a squirrel baffler..

the baffler is designed to make it impossible for the squirrel to get to your feeder

...Ahhhh, doesn't seem to be working all that well..

I tried to get a picture of the squirrels however, they all ran off

and all I was left with was this..ewwwww

Cinco De Mayo

In honor of Cinco De Mayo, I thought I would share

one of my favorite Mexican meals...

Flank Steak Fajita Bar

The Steak/Marinade

1 1-2 lb Flank Steak

1/2 c Worcestershirer sauce

1/4 cup tequila (optional)

2-3 limes (juiced)

Penzey's Seasonings:

Fajita, Northwoods, Lemon/Pepper, and Bavarian

Kosher salt and fresh ground pepper

Flank steak is a relatively tough cut of beef, however, a good marinade

and cutting the steak properly will give you a succulent piece of meat.

Mix Worcestershirer, tequila, lime juice and seasonings in a large Ziplock,

add flank steak and let sit on counter for an hour. When ready, grill meat over medium to high heat about 4-5 minutes each side. Cover with foil and let sit on a grooved cutting board for about 4 minutes...the steak will continue cooking. Now here is the tricky part, position meat so it is horizontal on the board. With a v-sharp knife, slice meat at an angle across the grain in thin strips. Cover with foil on board until the rest is prepared.

The Sides

3-4 red peppers (remove seeds and cut in strips)

1 large onion (cut in 1/4 inch rounds)

2 Tbs butter or margarine

Melt butter or margarine in a skillet

(I prefer a well seasoned cast iron skillet),

add peppers and onions and cook over medium heat until

onions and peppers are caramelized.

Remove from heat and set aside.

1 can of refried beans

1 c Velveeta cheese (cubed)

Place beans in a sauce pan with Velveeta,

cook over medium heat until cheese is melted

(tsannies Fav)

Box of your favorite Spanish rice

(Old El Paso is pretty good)

The Condiments

White or wheat flour tortilla's (I use the large size)

Home made* or store bought Salsa

Shredded Lettuce

1-2 bags of Shredded cheddar cheese

Sour Cream

*3-4 tomatoes chopped (retain juices)

1 medium onion (chopped)

1/2 cup Fresh Parsley (finely chopped)

1/2 c Fresh Cilantro (finely chopped)-optional

1-2 limes (juiced)

1 Tbs Olive oil

Place above ingredients in a bowl,

mix together and set aside.

The Bar

To set the fajita bar place items on a

table or bar in this order...

Plates/utensils

Flour Tortilla's...fill with the following...

Refried Beans (spread on the tortilla)

Flank Steak

Red peppers and Onions

Shredded Lettuce

Shredded Cheese

Sour Cream and Salsa

Spanish Rice

Add a pitcher of margarita's (check out the yummy recipe on Noble Pig)

and I'm just sayin'...Ole'

Wednesday is Prince Spagetti Day!

Remember back in the day those commercials for Prince Spaghetti....

visualize...Old Italian village...dinner time,

I think they added a girl's name--"Maria, Maria.."

I think it's a pasta day for us today...so I thought I would

share a delicious recipe with you!

1-3 tbs Olive oil

2 Shallots (minced)

2 zucchini (cut lengthwise, then 1/4" pieces to look like half moon)

2 yellow squash (same as above)

1 pint of grape tomatoes (cut in 1/2)

1-2 lbs raw shrimp (peeled, deveined)

1 tbs lemon zest (just the yellow stuff, not the white)

1 cup Italian parsley (finely chopped)

1 cup basil (finely chopped)

Kosher salt

fresh ground pepper

1-2 lbs Thin spaghetti (cooked Al Dante)*

Fresh grated Parmesan cheese

*You can also substitute spaghetti squash

"On top of spaghetti" CD

Heat Olive oil (enough to cover the bottom of the pan) in a sauce pan, add shallots, saute until transparent, add zucchini and yellow squash, saute 3-4 minutes then set aside.

In a separate pan, heat olive oil (enough to cover the bottom of the pan), add shrimp and cook till pink 2-4 minutes depending on the size.

Add shrimp to veggie mixture, toss mixture with cooked pasta then add tomatoes, lemon zest, parsley, basil, salt and pepper to taste...enjoy!

A Week in Review.......

This week started out with an overnight stay at the spa with my W-chester gal pals…what a blast….we were buffed and puffed and found our inner core through a series of treatments, yoga and pilates classes. I loved the Pilates…at my age I really need to focus on the inner core

to combat the muffin top that keeps popping out!

Following a fine meal we headed back to our rooms to play

a game of sex trivia….

Jeeze, there is so much I need to learn!

After 24 hours of shuffling around in a fluffy white robe and flip flops,

it was back to reality…. my daughter and I

embarked on a quick college tour...

(daughter: “this is my spring break…do you get it, break, like I need a break!”

mother: “fine, the community college in town is fine by me”)….GRRRRRRR!

6 schools, 3 days, 3 cities, 700 miles, 2 hotel rooms,

and a few yummy road food meals…later!

She could see herself attending 2 of the 6 schools☺

Since my little darling wasn’t too keen on the college tour scene, I suggested a little retail therapy to calm the nerves……during the course of perusing the shops in the mall, we stumbled upon this vending machine…this is a first for me…I mean really, whoever thought you can get your zit cream from a vending machine!

I’m just sayin’…All this in one week….I think I need to visit the spa again.

Our pal La la recently received a treadmill for her birthday...(she did ask for it...) Unlike another friend who received a closet full of Jenny Craig meals and didn't ask for it hmmmmmmmm...I recently visited a site that had this posted and thought perhaps we could recreate this while squackin!

After 22 years of working in an office out of the home, my Lovey informed me that the home office will be the next habitat for whoever knows how long....

In a matter of days my life as I knew it has changed....it's Ok ...just breath, just breath....yea, easy for others to say....Now here I sit, well actually, I really don't sit for very long...everything is so topsyturvy, I am not sure where to go...but change is good......right????

As the primary "stay at home person", you develop a certain routine, a certain order, a certain manner on maintaining the household however that may be...then kaboomey (did I just say that?) It's all out the window..hell in a hand basket:)

Oh My God, (and, I am being kind here...), I don't even make myself lunch, FFS!!......Ok, we both know this will be a learning experience...so until we can determine the end of the story...figure out our ending...(but what is the fun in that!)...we breath and try to co-exist in the same house all day, all night long.......help!

Did you ever have one of those days/weeks when you detest your closet?

Of course, I am sure I have plenty to wear,

but there are days when I just can't figure it out...

Earlier this week k.d. lang was on GMA and sang a song from her current CD...she then followed up with this song, recorded from an ealier CD....it brought tears to my eyes.

Last night we heard another version of the song on American Idol...it made my ears ring

I'm just sayin' some people are the real deal and some should just be the church lady!

When we renovated the house, we couldn't help but notice

that it needed some "warming up".

We started in the TV room where we built the new stone fireplace.....

We wanted the bar area to resemble the "look" so my friend MentalP

(maybe she will share her faux?) suggested this faux artist

(or should I say the female version of Elden

on the old show Murphy Brown!)

...well, it came out so good that we said,

"Hmmm, how about the entrance"....

(all this with encouragement from my pal

Ann who loves to help spend your $$)

Don't forget the living room...

Fireplace too.....

Of, course we need to do the kitchen,

The many hallways,

and, master bedroom and bath

Then I said..."Stop the madness"

But, not before the mural for the wall......

I have a dog, who has been a part of our family for nearly 16 years, so I guess in human years that would make him...let's see... 1 dog year times 7 human years...Ahhh, that would be 112 years old..I guess at his age I would have attitude too....This is how the scenerio went, or shall I say always goes every time this dog barks to go out...then wants to come in again!
